Fresh Eating

My
favorite afternoon pick me up has been Gazpacho. A delicious cold
tomato soup I had a lot of in the Andalucian region of Spain.
Here is my recipe I'd love to share with you:

3 Tomatoes
1 Small cucumber, peeled
1 Small Green Bell pepper
2 SmallAvocados
1/2 cup Cilantro
1 tsp. cumin
2 tsp. sea salt

1. First prepare the garnish: dice 1/2 the cucumber, 1/2 the bell
pepper, 1/2 of one of the avocados, 1/2 of one of the tomatoes, and
chop up a Tb. of the cilantro, then set aside
2. Cut the remaining vegetables into chunks, place in the blender
with the cumin, salt, and cilantro, and blend until smooth .
3. Split up into bowls, divide the garnishes into the bowls, and
eat. Yum!


Another Delicious hot day item is;
Fabulous Mango Pudding
Try and find a good source for fresh ripe Mango, if you don't live
by a mango tree, or you can just use all papaya.
2 small mangoes or 1 large mango, peeled and cut away from the seed
1 small papaya, sliced in half and seeded
1 lime juiced
1 Avocado

1. First pour the lime juice into the bottom of the blender
2. Place fruit in blender, and blend until it is a smooth puree
( The better your blender is , the finer the pudding texture, but
it should taste good, regardless of your machinery!)

These foods are "raw foods" or "live foods". The concept here is
the less you cook something the more nutrients available for you,
and since these items are not cooked at all , they are pretty damn
nutritious for you! And did I mention how exquisitely tasty they
both are?
I have a group of friends here on Maui, and we meet all over the
island and have Raw Food Pot Lucks. Only one of us is a complete
and total Raw Foodist, but the rest of us are just Gourmet Natural
Foodies, and we just love the creativity we have with this new food
preparation style. The buffets we end up with are so colorful and
magnificent that I would call it eye candy! Except that "Candy" has
such a negative connotation to us health nuts. But not any more,
Janet's Almond date candy are so scrumptious and simple without a
single bad thing in it, and Martene's Chocolate Tart made with
cacao nib powder... Good Lord, I was in Chocolate Heaven. and
without any guilt, Why would I ever want sugar again, It's so Lame!
Maybe I can talk them into sharing their recipes with my readers ; )
