I was impressed with one place I ate at in Boulder, CO called
VG Burgers
The menu was all vegan, which is great for the planet,
Mostly organic, also great for the planet.
And all their Take-out stuff is compostable, obviously great for the planet!
They use some local products, like Hamburger and hot dog buns from a nearby bakery, which reduces transportation energy waste
I had a veggie burger and soup which was delicious, and they also have french fries made from organic potatoes, and a full ice cream bar made from soy, rice and hemp ice cream!
This restaurant is the pilot which they are looking into franchising. This restaurant is a model of sustainability and gives me hope for the future.
If you are near the Boulder area, give them a visit. Seek out places like this in your area and support them! It is this outside of the box thinking that is going to change our food, our life, our planet!
